Chili Garlic Shrimp w/ Lemongrass Maifun Noodles

Inspired by a random discovery...lemongrass turmeric paste!

I was doing some food shopping online and I stumbled upon lemongrass turmeric paste. The light bulb went off. It was time to experiment!


So I started to think about what this would be good in. Shrimp and brown rice noodles immediately came to mind. I love that combination and I thought a thinner noodle might work well. I found brown rice maifun noodles at the store and went with that. But what else would I put in it? What veggies would I add? Could this be a good time to try out sriracha oil for the first time? Well...



Recipe


Ingredients

  • 2 lbs of large fresh shrimp Note: I will often buy it already deveined. I don't mind doing it myself, but I don't love it and it saves a ton of time

  • 8oz of brown rice maifun noodles

  • 2 red bell peppers

  • 2 green bell peppers

  • 1 lemon - for lemon juice

  • 1 bunch of fresh scallions

  • 1 bunch of fresh cilantro

  • 1 bunch of fresh basil

  • 8 cloves of fresh garlic

  • 1 1/2 tbsp of chili paste

  • 1/2 cup light coconut milk

  • 1 tbsp garlic salt

  • 1 tbsp red curry powder

  • 4 tbsp avocado oil

  • 2 tbsp sriracha oil

  • 2 tbsp fish sauce

  • 2 tbsp teriyaki marinade Note: If food with heat is not your thing, feel free to exclude the chili paste and sriracha oil.

Prep


  1. Wash the shrimp and devein if necessary.

  2. Season your shrimp with about half of your minced garlic 4 tbsp of garlic, lemon, chili paste, garlic salt, red curry powder and teriyaki marinade. Mix well and let sit for 10 minutes. While that sits...

  3. Cut your red and green bell peppers

  4. Wash your cilantro and scallions.

  5. Cut the green portion of you scallions into smaller pieces and discard the ends.

  6. Cut cilantro leaves into smaller pieces, discarding the stems

  7. Mince the 8 cloves of garlic


Instructions

  1. In a large pot, bring 6 cups of water to a boil. While that is preparing to boil...

  2. Add 2 tbsp of avocado oil to a saute pan or cast iron skilled on medium heat

  3. Once the oil is hot, add your shrimp

  4. Cook until the shrimp gets a nice brown to it. Remove from heat and set aside.

  5. In another saute pan, add 2 tbsp of avocado oil on medium-high heat

  6. Add the rest of your garlic, about half of your basil, and peppers.

  7. Saute for about 5 minutes.

  8. Add the lemongrass paste, about half of your scallions and coconut milk to the peppers.

  9. Mix well

  10. Add your noodles to the boiling water, cooking for 2 to 4 minutes

  11. Drain your noodles and add them to your sauce and veggies.

  12. Mix well

  13. Add in your sriracha oil, cilantro, fish sauce and the rest of your scallions/basil

  14. Continue to cook for 1 minute, mixing well.

  15. Finally, add you shrimp on top and shut it down...you are done!
