Air Fried Hot Wings w/ Pork Rind Crumbs

A carb friendly, no oil fried chicken full of flavor and that crunch? Yes, it is possible!

I often browse Amazon.com for food that can be delivered (especially in this COVID world). I don't even remember what I was truly looking for, but I stumbled upon something I had never heard of before...Pork Rind Crumbs. I looked at my computer screen with doubt. Is this a thing? The user reviews were excellent and people were raving about it being a great option for those that need to watch carbs or are on low carb diets. As a diabetic I am always looking to keep the carbs low. So, I bought a jar. OK, I bought 2, but I couldn't decide between original and Cajun flavor (Cajun one has a slight kick, but is still pretty mild).


I started to think...if I air fry with the pork rind crumbs, I am keeping carbs and oil out of a dish traditionally full of both. While traditional fried chicken used to be my go-to, I typically only make it on special occasions / potlucks. I have stayed away from deep frying anything, to be honest. But, fried chicken is the first thing that I cooked with my mom when I was about 12. I have fried chicken for chicken wing cook-offs, holidays, and Superbowl parties.


As I waited the 2 whole days it took for Prime delivery, I bought some chicken wings, got to marinating, and prepared to get to work.


Recipe


Ingredients

  • 2 lbs of cut chicken wings

  • 2 tbsp garlic salt

  • 2 tbsp Nashville hot seasoning

  • 2 tbsp Flavor God chipotle seasoning

  • 2 tbsp Spanish paprika

  • 1 tbsp pink Himalayan salt

  • 1 tbsp onion powder

  • 4 cloves of fresh garlic

  • 2 cups of buttermilk

  • 1 1/2 cups of pork rind crumbs

  • Avocado oil spray

Prep


  1. Season the chicken wings with garlic salt, Nashville hot seasoning, chipotle seasoning, and Spanish paprika.

  2. Cover chicken with buttermilk.

  3. Add garlic cloves, Himalayan salt and onion powder to you butter milk.

  4. Mix well, cover well and let your chicken marinate in the refrigerator for 4 to 12 hours.


Tips for air frying wings


  1. Spray the basket/rack (depending on your style of airfryer) with cooking spray prior to adding food to it. This helps prevent sticking.

  2. If you are making a "breaded" wing, you will want to carefully turn wings part of the way through to get that crunch all around it. I use tongs to turn them.

  3. Do not overcrowd the air fryer. It effects the airflow, which ultimately will effect the crispiness. Air on the side of less wings and cooking more batches

Instructions

  1. When you are done marinating, take the chicken out and let set at room temperature for 15-20 minutes.

  2. Spray your air fryer basket / tray with avocado oil spray.

  3. In a gallon zip log bag, put in about half of your pork rind crumbs.

  4. Take about 4 wings and let excess buttermilk drip off of each.

  5. Add to bag and shake well to evenly coat your wings.

  6. Carefully take each out and place them in your air fryer.

  7. Spray your wings with avocado oil.

  8. Set temperature to 380 degrees and cook for about 25 minutes (Internal temperature of 165). I typically turn these wings once around the 18-20 minute mark.


Crunchy and juicy fried wings without the flour and oil! Who could ask for anything more?! This is excellent football watching food (Go Giants)!
