Honey Spice Salmon

Fun Fact: Salmon is called the King of Fish!
Salmon is a great post-workout food as it doesn't take a lot of prep time.
I came up with this one day as I was looking for an excuse to use fresh thyme from my garden. For some reason I was also looking to experiment with a fruit juice. Apple juice seemed to be the best bet.
I have often added Frank's Red Hot to BBQ sauces, however, during this experiment I found that it works great when added to a juice-based sauce.

Ingredients
2 salmon fillets
3 tbsp olive oil
2 cups apple juice
4 tsp honey
4 tsp Frank's Red Hot sauce
4 cloves of garlic (sliced)
2 tsp salt
2 tsp black pepper
1 1/2 tbsp honey
1 1/2 tbsp Frank's Red Hot sauce
2 sprigs of fresh thyme
Scallions for garnish
Instructions
Add 2 tbsp olive oil to a skillet and heat on high heat
Once oil is hot add salmon fillets and sear on both sides; remove and set aside
Reduce the heat to med-low and add just the garlic for 30 seconds
Add apple juice and stir for 2 minutes
Add sprigs of thyme and Frank's Red Hot sauce, stir slowly for a minute or two
Return the salmon fillets to the skillet, turning the heat to low
Chop some scallions and sauté in a separate skillet
Place salmon on plates and drizzle with sauce from the skillet
Place a few garlic slices on the fillets and sprinkle with scallions
Serve immediately!
