Honey Spice Salmon

Fun Fact: Salmon is called the King of Fish!


Salmon is a great post-workout food as it doesn't take a lot of prep time.


I came up with this one day as I was looking for an excuse to use fresh thyme from my garden. For some reason I was also looking to experiment with a fruit juice. Apple juice seemed to be the best bet.


I have often added Frank's Red Hot to BBQ sauces, however, during this experiment I found that it works great when added to a juice-based sauce.

Ingredients

  • 2 salmon fillets

  • 3 tbsp olive oil

  • 2 cups apple juice

  • 4 tsp honey

  • 4 tsp Frank's Red Hot sauce

  • 4 cloves of garlic (sliced)

  • 2 tsp salt

  • 2 tsp black pepper

  • 1 1/2 tbsp honey

  • 1 1/2 tbsp Frank's Red Hot sauce

  • 2 sprigs of fresh thyme

  • Scallions for garnish

Instructions

  1. Add 2 tbsp olive oil to a skillet and heat on high heat

  2. Once oil is hot add salmon fillets and sear on both sides; remove and set aside

  3. Reduce the heat to med-low and add just the garlic for 30 seconds

  4. Add apple juice and stir for 2 minutes

  5. Add sprigs of thyme and Frank's Red Hot sauce, stir slowly for a minute or two

  6. Return the salmon fillets to the skillet, turning the heat to low

  7. Chop some scallions and sauté in a separate skillet

  8. Place salmon on plates and drizzle with sauce from the skillet

  9. Place a few garlic slices on the fillets and sprinkle with scallions

  10. Serve immediately!
