Curry Spice Pulled Pork Taquitos

Prepare these for the next televised sporting event!

Boxing matches were coming up on the weekend and I needed to make something other than my usual wings. I wanted something with a Caribbean flavor and a bit of heat!


I made a Caribbean style curry blend using cumin, allspice, turmeric, ginger and other spices and rubbed it on pork tenderloin. The night before the boxing matches I put meat in the slow cooker on low. When I woke up 8 hours later the meat was ready to be pulled apart.


I then simmered the pork in a frying pan with coconut milk and few dashes of cinnamon to add another layer to the flavor. Just to make sure there is a little heat I added a few drops of Matouk's Calypso Sauce. If you don't already have this hot sauce in your collection I suggest picking some up from here:



In the end I needed a little more kick so used the hot sauce as dipping sauce. I don't suggest doing that if you are a lightweight! If you need to take the edge off have some sour cream on the side. We won't judge you (we'll try not to)!
